Pasta and Risotto Dishes

Pastas and risottos make great family meals and with all of the choices of noodles and grains available, the possibilities are endless. 

Pasta

Choose standard semolina pasta or for a healthier version, whole wheat and multigrain pastas are available. If you need to minimize or eliminate your gluten intake, gluten-free pastas are plentiful.

Spaghetti and Meatballs - This is a meal that pleases everyone. And you can choose to have your meatballs made from beef, pork, turkey, or you can go with a meat substitute. It's all good!

Pasta al Tonno - This is a simple, rustic dish that is surprisingly delicious. A simple red sauce is accented with capers and calamata olives, with rich Italian tuna added just before serving. There will be no leftovers.

Pasta With Pesto - The key to this dish is homemade pesto. Not the oily stuff in a jar, but the thick rich paste made in your kitchen.

Linguini With White Clam Sauce - The flavor of this sauce is irresistible. Pass the bread to soak up the leftover sauce.

Baked Orzo With Shrimp, Tomato, Olives and Feta - This dish is as Mediterranean as it gets!

Penne With Vodka Sauce – The thick, slightly creamy vodka sauce is heavenly when served over penne. Add a little garlic bread and a glass of chianti...and life is good.

Farfalle With Arugula Pesto - The slightly spicy, nutty flavor of arugula makes a wonderful substitute for basil in this "pesto" sauce. The bowtie pasta is tossed with the pesto and cherry tomatoes to make a wonderfully authentic dish characteristic of the Puglia region of Italy.

Spaghetti Alla Norma - Simply delicious! Spaghetti paired with sauteed eggplant, fresh cheese and a tomato sauce infused with garlic.

Linguini With Potatoes, Green Beans, and Pesto - This is a hearty meal from the Liguria region of Italy. The potato and green beans pair nicely with the pesto sauce.

Risotto

Risotto is heavenly. While it is usually made from arborio rice, it can also be fashioned from other types of grains as well. Mix in herbs, vegetables, seafood, meat, or just a bit of cheese and you have a memorable meal. 

Risotto Milanese - A classis preparation. This risotto is flavored with only saffron and parmasean cheese. Add vegetables or protein as you prefer...or not at all.

Risotto With Crab and Shrimp - A simple preparation that comes to us from Venice. Pinot Grigio anyone?

Minted Green Risotto - This tasty version of risotto gets its bright green color from spinach and mint.

Blue Cheese Risotto - Gorgonzola cheese and bacon give this risotto its unusual but arresting flavor.

Mushroom Risotto - Combine cremini, oyster, and shitake mushrooms with the creamy risotto and a sprinkling of walnuts for this earthy version.

Ham and Spinach Risotto - This is a wonderful preparation...the salty ham, the earthy spinach and the creamy rice make a delightful pairing.
