Vegetarian Dishes

A healthy Mediterranean diet includes an abundance of fresh fruits and vegetables. All of our vegetables are seasonal choices to ensure the freshest local ingredients.

Farro With Kale, Lemon, and Avocado – This wonderful dish contrasts the nutty flavor of farro with the acidity of lemon, the creaminess of avocado, and the earthy taste and texture of kale.

Twice Baked Potatoes With Kale – Large russet potatoes baked, and then refilled and baked again with a combination of kale, yogurt or sour cream, and cheddar cheese.

Spaghetti Squash Casserole – The spaghetti squash yields a low fat, low carbohydrate alternative to regular pasta. Here it is combined with tomato, mushrooms, onions, ricotta cheese, and fresh herbs in a savory combination that works year around.

Veggie and Black Bean Enchiladas – These enchiladas combine black beans with a variey of fresh vegetables, finely chopped greens, and a bit of spice. The are rolled in tortillas, topped with a red or green enchilada sauce and a bit of cheddar cheese, and baked until bubbling and brown.

Salad Nicoise – A salad with the works…tomato, red onion, cucumber, red peppers, blanched vegetables (green beans, cauliflower, broccoli), hard cooked egg, and tuna, served with a homemade lemon vinaigrette.

Stuffed Peppers – Colorful sweet peppers, stuffed with a mixture of grains, vegetables, and cheese.

Baked Stuffed Eggplant – Generously sized halves of eggplant, baked and stuffed with a combination of vegetables and rice, topped with breadcrumbs and parmesan cheese, and finished under the broiler.

Pasta Puttanesca – Homemade red sauce with tomato, zucchini, capers, and black olives, served with your choice of  pasta.

Acorn Squash Quesadilla – These quesadillas feature sharp cheddar cheese, sweet/savory roasted squash, and just the right touch of chili powder. For those who like it hot, jalapeño peppers are an option.

Vegetable Lasagna – A classic lasagna made with baked (not fried) eggplant and zucchini, spinach, and fresh ricotta and cheddar cheeses.

Orecchiette With Broccoli Rabe – Small, ear-shaped pasta is combined with the earthly taste of broccoli rabe, some red pepper and onion to create a rustic Italian dish.
